We love grabbing a slice of this sweet bread when we stop at Starbucks, but we hate the cost. Making this Copycat Starbucks Lemon Loaf at home saves time and money, but mostly it makes you a star in the kitchen with little effort. As always we like to keep things easy and semi-homemade if possible and this is a great recipe to use those boxed cake mixes you got for free with coupons this year without them looking or tasting like a plain old cake.
COPYCAT STARBUCKS LEMON LOAF
INGREDIENTS
CAKE:
1 box Yellow Cake Mix
4 Eggs
1/2 cup Milk
1 box (3.4 oz) Instant Lemon Pudding Mix
1/2 cup Vegetable Oil
8 oz Sour Cream
6 tbsp Lemon Juice
GLAZE:
3 cup Powdered Sugar
4 tbsp Lemon Juice
DIRECTIONS
- Preheat oven to 350
- Spray two loaf pans with non stick spray.
- Beat all of the cake ingredients until well combined.
- Evenly fill both loaf pans.
- Bake for 50 minutes or until golden brown and toothpick insert in middle comes out clean.
- Allow to cool for at least 15 minutes before removing from pans.
- Combine glaze ingredients and stir until well blended.
- Drizzle over loaves and allow to set before slicing.
Make double batches of this yummy cake, allow to cool and wrap well to freeze before icing for easy last minute treats on the go. This Copycat Starbucks Lemon Loaf is a perfect breakfast bread or dessert with a nice cup of coffee after dinner.
